Paleo Chicken, Cauliflower Soup

If you’re like me, you don’t want to leave the house when it’s cold and windy. (Ie, today here in Delaware). Soups are my wintertime go to because they’re so comforting and hearty. I tend to use the same base for a lot of my soups too, but the nice thing is that it’s so versatile. Sauté whichever veggies you have with a little olive oil then throw in broth and meat. Voila! Like I always say, read labels. There are so many hidden ingredients in everything. Watch for sugar especially in chicken broth.

This soup includes

Carrots

Celery

Onion

Mushrooms

Cauliflower rice

Sauté all veggies with olive oil until soft.

Chicken (I had leftover already cooked from an oven roasted chicken)

Chicken broth

Salt, pepper and thyme to taste

After the veggies were done I threw in the chicken and broth and just warmed it through (about 15 min).
